Do You Make Peanut Butter Protein Balls?

One of the things I’ve learned from my relationship with Megan is that there’s a bit of magic in every bite of peanut butter protein balls. Not only does she make them from time to time, but Kaldi’s Coffee also offers their own twist that is both delicious and healthy.

I’ve now tried my hand at making this snack, with somewhat mixed results:

  1. The first time, I used an entire jar of peanut butter, big chocolate chips, rice crispies, oats, vanilla, and a touch of honey. Other than being really sticky, these turned out quite well.
  2. The second time I went over the top. In addition to the original ingredients, I added hot cocoa mix, marshmallows, graham crackers, and cricket flour. It was just too much stuff–they didn’t taste very good.

I’m preparing to try again, this time with more focus (like the first attempt) and a touch of water in the mixture, which I hope will make the peanut butter less sticky so I can shape the balls better. We’ll see how it goes.

  1. I’m a big fan of peanut butter and since meeting the Stegmaiers I’ve even been putting it in my breakfast cereal. I would love to give these a try! Can you post a recipe?

    • Brian’s recipe below sounds really good! Mine is very loose in terms of the quantities of each ingredient. I think the next time I make them, I’ll cook them on the stove like no-bake cookies (but with much less sugar).

  2. Yes, I agree about the Kaldi’s ones. They are excellent. I’ve used a recipe that uses 1 cup peanut butter, 1 cup oatmeal (made into flour using the blender), 3 scoops vanilla protein powder, 1/4 cup almond milk and chocolate chips (use as many as you want). Mix everything but the almond milk. Then keep mixing and add the almond milk bit by bit to help bind everything together

    I suspect given your love for chocolate you’ll find them appealing – and they sounded like a pretty healthy snack to me.

    Also, long long ago we got peanut butter balls with wasabi as desert in Hawaii. The combination sounded crazy but worked very well.

  4. Frankly, they look absurdly delicious. I am, however, reluctant to extol the virtues of anything that grasps at even the edges of experimental dietary trends. Clearly there is just wholesome deliciousness on display here (in moderation, as always) but I would probably add a little bourbon and confectioner’s sugar just to make sure it wasn’t obviously healthy. 😉
